This week for meal prep I was debating between a saucy Italian choice, or a warming Mexican choice -the tacos won. I tried to go the easy route and pulled a taco seasoning packet out of the cupboard; but after reading the ingredient list including dextrose, maltodextrin, disodium guanylate.... it was a no go. Luckily I found a super tasty Whole30 taco seasoning recipe that matched my spice rack!
I used ground turkey for this recipe because I bought a ton this week, but feel free to use any meat or substitute you prefer! And remember... don't touch your nose after cutting the jalapenos; it burns (rookie mistake!) 🙄
Ingredients:
1 pound of ground turkey
2 jalapenos
1 tomato
4 mini peppers
1/2 onion
1 1/2 tbsp taco seasoning (this is my favorite at home taco seasoning so far )
2 1/2 tbsp tomato paste
Avocado for add on!
How to:
Chop the veggies up in preferred size. I wanted chunky taco meat, so I left mine a little larger.
Combine veggies and saute for a few minutes on medium.
Add in rest of ingredients and simmer until liquid has been absorbed, about 10 minutes.
Put completed meal over chopped lettuce with avocado for a taco salad, or in romaine lettuce for taco lettuce wraps!
