Time to get spooky! Typically when browsing the internet for Halloween snacks the majority of what I come across are sweet, sugary, and good for the kids. What about the adults that still like to have a good time but also have to be health conscience?! These zombie deviled egg eyes will be a scary good time for your next party. Happy Halloween!
What you will need:
12 large eggs
1 ripe avocado (cut, pitted, and peeled)
1 lemon (juiced without seeds)
1/3 cup plain Greek yogurt
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
Kalamata olives (sliced into rings)
Piping bag
Green food coloring
Optional: cherry tomatoes
What to do:
Hard-boil eggs: Bring a large pot of water to a boil. Slowly place the eggs in one by one. Let boil for ten minutes, turn off burner and let sit for five more minutes in the water. Carefully strain, and let cool or run under cold water. *Careful not to burn yourself!*
Peel eggs after cooled. Cut in half, and carefully remove the yolk and place yolk in separate bowl.
Combine avocado, egg yolks, yogurt, and seasonings into bowl. Mix or mash until a somewhat smooth consistency. Add food coloring to desired spookiness!
Put egg/avocado mix in a piping bag, and fill egg centers with mixture (trust me, this takes practice!)
Place olive rings on top of egg to form the eye.
If desired, squeeze tomatoes to add more gore!
You can play around with this as well - I used the juice of tomatoes to sprinkle on top to give it a feel of gore. You can use a red sauce to represent veins of the eyes, or extra paprika to "explode" out of the olive. Bring this to the next Halloween event you attend and you will be the life of the party - (or the death 🤣)
