Not going to lie, I definitely gave into the "sugar dragon" with this one - and then may have overindulged. But this sweet treat is refined sugar free, gluten free, dairy free, and DELICIOUS.
While making this I was able to learn so much about baking. I was thinking about working out in the morning before making this but it ended taking me about three hours total with the shopping time included. It was my first time making a lemon curd, so I assume more experienced bakers would be able to whip it up quicker. But when it comes to baking, I follow the instructions to a T!

When it came to the lemon curd and the raspberry sauce, I was a little unsure of the consistency. I whisked the lemon curd pretty consistently for about ten minutes. It did thicken a bit more after letting it cool, but overall this part takes a decent amount of whisking work.
The raspberry sauce took a bit to thicken as well - I ended up adding a little more starch while on the burner, and when it cooled it thickened quite a bit. If you think this is taking longer than expected, just know it will thicken when it cools.
