Filling Whole30 Meatloaf

Living in Minnesota, I crave those warm hearty meals quite often. Although we have had a mild winter so far, I am so excited for the meatloaf and veggie soup I have for this weeks meal prep. If you're looking for a filling meal, this flavorful meatloaf will hit the spot!

Ingredients:

  • 2 lbs ground beef

  • 2 large carrots, shredded

  • 1 medium onion, shredded

  • 1 tbsp garlic

  • 1 egg

  • 2 tsp garlic powder

  • 1/2 tsp cumin

  • 1/2 tsp turmeric

  • 1 tsp crushed red pepper

  • 1 tsp parsley

  • 1 tsp apple cider vinegar

  • 2 tbsp tomato paste

  • 1/4 coconut flour


How To:

  • Pre-heat oven to 365 degrees

  • Combine shredded carrots, onion, and garlic and saute until onions are translucent. Sprinkle with salt and pepper and let cool.

  • In a large mixing bowl, combine all ingredients and mix with your hands. I've never enjoyed this part, but don't be afraid to get messy!

  • Place mixture evenly in an oven safe pan. I spread a layer of Primal Kitchen's Whole30 compliant BBQ sauce on top.

  • Bake until internal temperature is at 165 degrees - about 35 to 65 minutes depending on depth of pan.
