Living in Minnesota, I crave those warm hearty meals quite often. Although we have had a mild winter so far, I am so excited for the meatloaf and veggie soup I have for this weeks meal prep. If you're looking for a filling meal, this flavorful meatloaf will hit the spot!
Ingredients:
2 lbs ground beef
2 large carrots, shredded
1 medium onion, shredded
1 tbsp garlic
1 egg
2 tsp garlic powder
1/2 tsp cumin
1/2 tsp turmeric
1 tsp crushed red pepper
1 tsp parsley
1 tsp apple cider vinegar
2 tbsp tomato paste
1/4 coconut flour
How To:
Pre-heat oven to 365 degrees
Combine shredded carrots, onion, and garlic and saute until onions are translucent. Sprinkle with salt and pepper and let cool.
In a large mixing bowl, combine all ingredients and mix with your hands. I've never enjoyed this part, but don't be afraid to get messy!
Place mixture evenly in an oven safe pan. I spread a layer of Primal Kitchen's Whole30 compliant BBQ sauce on top.
Bake until internal temperature is at 165 degrees - about 35 to 65 minutes depending on depth of pan.
