Craving a mixture of meals? Want something versatile that you can use for multiple types of meals? This is your recipe! I was originally craving soup when I had this in mind, but as I started combining all of the the delicious ingredients I realized I did not want to cover up the wonderful flavors in a soup. So, I decided to leave it as is and poured it over a bowl of veggies. To be honest, I was really wanting something like cauliflower rice to use, but was too lazy! We all have those days, don't we?
This recipe can easily be made Whole30 if you choose to do so. I used many ingredients that are available in Whole30 items. I hope you enjoy - it is so flavorful!
What you will need:
1 lb of beef (I used skirt steak)
1 16 ounce package of mushrooms
4 tbsp of butter (or ghee for Whole30)
1 tsp minced garlic
2 1/2 tbsp Worcestershire sauce
1 1/2 tbsp red wine vinegar
1 tbsp tomato paste
2 green onions, chopped
Salt and pepper to taste
What to do:
Salt and pepper your steak, and cut into bite size pieces
Saute butter and garlic in a medium sized pan on medium high heat
After garlic has browned, add steak and saute on high for 2 minutes until the outside is browned
Turn heat to medium
Add everything but the green onions and stir. Let simmer for five minutes
Add green onion and simmer for another five minutes
If need be, add starch or flour to thicken
Add salt and pepper to taste and enjoy!
I placed my over veggies at the end, but rice up some cauliflower, cook up some rice or noodles, or transfer this recipe into a beef and mushroom soup!
